Brix Distillers is an independent Australian rum producer with an urban Distillery and Bar based in the heart of Sydney’s Surry Hills – close to Sydney CBD, Sydney Airport and Sydney’s central train station.

Their boutique distillery and bar celebrates the history of rum with a distinctly local twist, using premium Australian ingredients to create their range of small-batch rums including their signature aged Australian Rum, Spiced Rum, Cane Spirit, and a Mango Rum made with fresh Queensland mangoes.

Step inside for a behind-the-scenes Distillery Tour, get hands-on with a Cocktail Class, or a Rum Spicing Session, where you can craft your own unique spiced rum blend. Prefer to sit back and sip? Settle in at their bar to explore the full Brix range right where it was made, enjoy a curated selection of top Australian rums, and indulge in a menu designed to complement every pour.

Brix Distillery Tour and Tasting

From $40 to $41

Distillery tours are a full sensory experience that allows you to take a deep dive into all stages of the rum-making process with one of the Brix Team.

Tours run for approximately 90 minutes and include a guided walk-through of the rum-making facility, where you will discover the passion and craft that goes into creating their White, Gold and Spiced rums. You will learn how rich Australian molasses is turned, via their 1800 litre copper still ‘Molly’ into the burnished spirit swirling in your glass.

Watch fresh Queensland sugar cane being juiced, taste the actual molasses they ferment, smell the barrel staves to learn more about the maturation process and discover how to fully appreciate one of the world’s oldest and most diverse spirits.

The tour is followed by a Brix tasting session with your dedicated tour guide where you will sample three of their core range rums in the Brix Distillery Bar. They can cater for up to 20 people per tour, more by prior arrangement.

Guests are welcome to stay for lunch or dinner after their tour with a booking (Excluding Mondays).
