The iconic North Hobart wine bar formally known as Willing Bros has entered an exciting new era. With new female owners at the helm, the vibe is warm, the service is swift and the food is immaculate.
Chef Ryan Dolan, delivers an inspired neo-bistro menu. Utilising his relationships with local growers and technique honed in French Michelin-starred kitchens.
The wine list highlights emerging Tasmanian talent alongside classic producers from near and far. With 15 wines by the glass and over 300 bottles to explore, there is a drop to suit every taste and curiosity.
Led by Angie Nichols and Emma Davis, who took the reins in 2024 who also own and operate the neighbouring cafe Raincheck Lounge and founded the award-winning cocktail bar Society – Salamanca in 2015.
