Willing Wine Bar is a classic neighbourhood wine bar, there are around 300 bottles on the list, with many arrayed on the formidable wine wall opposite the bar, and the selection is democratic, with bins from far and wide.

Chef Ryan Dolan, delivers an inspired neo-bistro menu. Utilising his relationships with local growers and technique honed in French Michelin-starred kitchens.

The wine list highlights emerging Tasmanian talent alongside classic producers from near and far. With 15 wines by the glass and over 300 bottles to explore, there is a drop to suit every taste and curiosity.
