Noémie and Prosper met in 2021 in Launceston Tasmania. After working together for 3 years they decided to start their own journey with Le Petit Chou, their very own French pâtisserie.

Prosper and Noemie had the ambition to marry the great Tasmanian ingredients with the classics of the French pastry. Noémie comes from Rodez, a small town in the south of France, and Prosper comes from Bassin d’Arcachon, a coastal city near Bordeaux

Prosper is a pastry chef with 16 years of experience, involving 10 years of trade in multiple bakeries all across France. The last 6 years as part owner and head pastry chef at Manubakery.

At Le Petit Chou, Prosper and Noémie offer sweet, savory, and gluten-free options to cater for most. Taking the choux pastry and offering it in an infinite variety of flavors and shapes.
